Kartoshka, a popular Russian dessert, is essentially a no-bake chocolate potato truffle. It’s a delicious and simple treat to make. Here’s a basic recipe for Kartoshka:

 

Ingredients:

 

– 300g (about 2 cups) of plain biscuits (such as digestive biscuits or tea biscuits)

– 200g (about 1 cup) of cooked, mashed potatoes (cooled)

– 100g (about 3.5 oz) of unsalted butter, softened

– 4 tablespoons of cocoa powder

– 100g (about 1/2 cup) of granulated sugar

– 1 teaspoon of vanilla extract

– Cocoa powder, powdered sugar, or shredded chocolate for coating (optional)

– Nuts, sprinkles, or chocolate chips for decoration (optional)

 

Instructions:

 

1. Prepare the Biscuits: Crush the biscuits into fine crumbs. You can use a food processor or place the biscuits in a sealable plastic bag and crush them with a rolling pin.

2. Mix the Ingredients: In a large mixing bowl, combine the mashed potatoes, softened butter, cocoa powder, granulated sugar, and vanilla extract. Mix until well combined.

3. Add the Biscuit Crumbs: Gradually add the biscuit crumbs to the potato mixture, stirring until everything is evenly incorporated and forms a dough-like consistency.

4. Shape the Truffles: Take small portions of the mixture and roll them into small balls, about the size of a walnut. Place the balls on a baking tray lined with parchment paper.

5. Optional Coating: If desired, you can roll the truffles in cocoa powder, powdered sugar, or shredded chocolate for an extra layer of flavour and decoration.

6. Decorate: You can optionally decorate the Kartoshka truffles with nuts, sprinkles, or chocolate chips by gently pressing them onto the surface of the truffles.

7. Chill and Serve: Place the truffles in the refrigerator to chill for at least 1-2 hours before serving. This helps them firm up and allows the flavours to meld together.

8. Serve and Enjoy: Once chilled, serve your delicious Kartoshka truffles and enjoy!

Notes:

– Kartoshka truffles can be stored in an airtight container in the refrigerator for up to a week.

– Feel free to adjust the sweetness according to your taste preference by adding more or less sugar.

– Experiment with different coatings and decorations to customise your Kartoshka truffles.
