Ingredients
For the char siu filling:
- 1 lb (450g) Char Siu (Chinese BBQ Pork), diced
- 2 tablespoons hoisin sauce
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce
- 1 tablespoon sugar
- 1 tablespoon sesame oil
- 1 tablespoon cornstarch
- 1/2 cup (120ml) water
bun dough:
- 4 cups (500g) all-purpose flour
- 1/2 cup (100g) sugar
- 1 tablespoon baking powder
- 1 teaspoon active dry yeast
- 1 1/4 cups (300ml) warm milk
- 2 tablespoons vegetable oil
Instructions
Prepare the char siu filling
- In a small bowl, mix together hoisin sauce, oyster sauce, soy sauce, sugar, sesame oil, cornstarch, and water to create a sauce.
- Heat the sauce in a pan over medium heat until it thickens.
- Add diced Char Siu to the pan and stir until well coated with the sauce.
- Remove from heat and set aside to cool.
Make the bun dough
- In a bowl, combine flour, sugar, and baking powder.
- In a separate bowl, mix warm milk and yeast. Let it sit for a few minutes until it becomes frothy.
- Add the yeast mixture to the flour mixture and knead until a smooth dough forms.
- Add vegetable oil and continue kneading until the dough is elastic and no longer sticky.
- Cover the dough with a damp cloth and let it rise in a warm place for about 1-2 hours or until it has doubled in size.
Assemble the char siu bao
- Punch down the risen dough and divide it into equal portions.
- Roll each portion into a ball and flatten it into a small disc using your hands or a rolling pin.
- Place a spoonful of the cooled Char Siu filling in the center of each disc.
- Gather the edges of the dough and pinch them together to seal, forming a bun.
- Place each bun on a small square of parchment paper.
Steam the buns
- Arrange the buns on a steamer, leaving space between them to expand.
- Steam over high heat for about 15-20 minutes, or until the buns are cooked through and the dough is fluffy.
