Railway lamb curry is a popular dish in India, especially among train travellers. It’s a flavourful and spicy curry often served with rice or Indian bread (roti or naan). Here’s a simple recipe for making railway lamb curry:

Ingredients:
- 500 grams lamb, cut into bite-sized pieces
- 2 onions, finely chopped
- 3 tomatoes, finely chopped
- 3-4 green chilies, slit
- 1-inch ginger, grated
- 4-5 cloves of garlic, minced
- 1/2 cup yogurt
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 2-3 cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick
- 1 teaspoon turmeric powder
- 1 tablespoon red chili powder
- 1 tablespoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Marinate the lamb:
- In a bowl, mix the lamb pieces with yoghurt, grated ginger, minced garlic, turmeric powder, red chilli powder, and salt. Let it marinate for at least 2-3 hours or overnight in the refrigerator for better flavour.
Cooking the lamb:
- Heat oil in a heavy-bottomed pan or pressure cooker. Add cumin seeds, cardamom pods, cloves, and cinnamon sticks. Let them splutter.
- Add the chopped onions and sauté until golden brown.
- Add the marinated lamb and cook until the meat is browned on all sides.
Add tomatoes and spices:
- Add chopped tomatoes and green chillies. Cook until the tomatoes are soft and the oil starts to separate from the masala.
- Add garam masala and mix well.
- Add enough water to cover the lamb and bring it to a boil.
- Lower the heat, cover the pan or pressure cooker, and let the lamb simmer until tender. If using a pressure cooker, cook for about 15-20 minutes or until the lamb is cooked.
Adjust the seasoning:
- Adjust salt and spice levels according to your taste. Add more chilli powder if you prefer it spicier. Serve with roti or naan.
