Christmas 2023: Side dishes for a Global South-inspired dinner, Brazilian Chicken fritters

Coxinha de Galinha is a delicious Brazilian appetiser that consists of shredded chicken wrapped in a flavourful dough, shaped into a drumstick, and deep-fried until golden brown.
Here’s a recipe for Coxinha de Galinha:

Ingredients:

Dough:

  • 2 cups chicken broth
  • 1 cup whole milk
  • 1/2 cup unsalted butter
  • 2 cups all-purpose flour
  • Salt to taste

Filling:

  • 2 cups shredded cooked chicken (you can use rotisserie chicken)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup cream cheese (optional)
  • Chopped parsley for garnish

Coating and Frying:

  • 2 cups breadcrumbs
  • 2-3 eggs, beaten
  • Vegetable oil for frying

Instructions:

Preparing the Filling:

  1. In a pan, heat olive oil over medium heat. Add chopped onions and garlic, sauté until translucent.
  2. Add shredded chicken to the pan, season with salt and pepper. Cook for a few minutes until well combined.
  3. Optional: Stir in cream cheese until melted and well mixed.
  4. Remove from heat and let the filling cool. Once cooled, add chopped parsley for freshness.

Making the Dough:

  1. In a saucepan, combine chicken broth, milk, and butter. Bring to a simmer over medium heat.
  2. Gradually whisk in the flour, stirring constantly to avoid lumps. Continue cooking until the dough pulls away from the sides of the pan.
  3. Remove from heat and let the dough cool for a few minutes.

Assembling Coxinhas:

  1. Take a small portion of the dough, flatten it in your hand, and add a spoonful of the chicken filling in the center.
  2. Mold the dough around the filling, shaping it into a drumstick or teardrop shape.
  3. Dip the coxinha in beaten eggs and roll it in breadcrumbs, ensuring an even coating.

Frying Coxinhas:

  1. Heat vegetable oil in a deep fryer or a large, deep pan to 350°F (180°C).
  2. Fry the coxinhas in batches until they turn golden brown, turning occasionally to ensure even frying.
  3. Remove from the oil and place them on a paper towel to absorb excess oil.

Serve the Coxinha de Galinha hot as an appetiser with your favourite dipping sauce. Enjoy your Brazilian culinary delight!
