Ingredients:
For Marinating the Fish:
- 500 grams fish (like kingfish, mackerel, or any firm-fleshed fish)
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- Salt to taste
For the Curry:
- 1 cup grated coconut
- 2-3 green chilies
- 1 teaspoon mustard seeds
- 1 tablespoon ginger, chopped
- 1 tablespoon garlic, chopped
- 1-2 sprigs curry leaves
- 1 large onion, finely sliced
- 2-3 ripe tomatoes, chopped
- 1 teaspoon turmeric powder
- 2-3 tablespoons tamarind paste (soaked in water)
- 1 cup coconut milk
- 2 tablespoons coconut oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Marinating the Fish: a. Clean the fish thoroughly and cut it into medium-sized pieces. b. In a bowl, mix the fish with turmeric powder, red chili powder, and salt. Allow it to marinate for about 30 minutes.
- Preparing the Coconut Paste: a. Grind grated coconut, green chilies, and a little water to make a smooth paste. Set aside.
- Cooking the Fish Curry: a. Heat coconut oil in a deep pan or clay pot over medium heat. b. Add mustard seeds and let them splutter. c. Add chopped ginger, garlic, and curry leaves. Saute for a minute. d. Add sliced onions and cook until they turn golden brown. e. Add turmeric powder and sauté for a minute. f. Add chopped tomatoes and cook until they become soft and mushy. g. Add the coconut paste and cook for a few minutes until the oil separates. h. Add tamarind paste, coconut milk, and salt. Bring it to a gentle boil.
- Adding the Fish: Carefully add the marinated fish pieces into the curry. Reduce the heat to low and let it simmer until the fish is cooked through (approximately 10-15 minutes). Be careful not to overcook the fish.
- Garnish and Serve: a. Once the fish is cooked, remove from heat. b. Garnish with fresh coriander leaves.
