Ingredients
Koeksister dough:

- 1 cup water

Instructions
Prepare the dough:
- Sift the flour, salt, and baking powder together in a large mixing bowl.
- Rub the butter into the dry ingredients until the mixture resembles breadcrumbs.
- In a separate bowl, beat the eggs and milk together.
- Make a well in the center of the dry ingredients and pour the egg mixture into it.
- Mix until you have a soft dough, adding a little more milk if necessary.
- Knead the dough until it’s smooth, cover it with a damp cloth, and let it rest for about 30 minutes.
Make the syrup
- Combine the sugar, water, lemon juice, and cinnamon stick in a saucepan.
- Bring the mixture to a boil, then reduce the heat and simmer for about 15-20 minutes until it forms a slightly thick syrup.
- Remove from heat, add a pinch of cream of tartar, and allow it to cool.
Shape the koeksisters
- Roll out the dough on a floured surface to about 1/4-inch thickness.
- Cut the dough into strips about 4 inches long and 1/2 inch wide.
- Make a lengthwise slit in the center of each strip, leaving one end uncut.
- Pull one end of the strip through the slit to create the twisted shape. You can make the twists as tight or loose as you prefer.
Deep fry
- Heat the oil in a deep saucepan or fryer to around 350°F (175°C).
- Fry the koeksisters in batches, ensuring they are golden brown and crispy. This should take about 3-4 minutes per batch.
- Remove them from the oil and drain on paper towels.
Syrup soak
- While the koeksisters are still warm, dip them into the cooled syrup, ensuring they’re well coated.
- Allow them to soak for a few minutes, then remove and let any excess syrup drip off.
Serve:
- Allow the koeksisters to cool completely before serving. They are best enjoyed when the syrup has soaked in and they are slightly sticky and sweet.
