Koeksisters are a beloved treat in South Africa and can be found in bakeries, at markets, and are often homemade for family gatherings and festive occasions. They are known for their sweet, syrupy exterior and a soft, doughy interior, making them a delightful indulgence for those with a sweet tooth.

Ingredients

Koeksister dough:

  • 4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2 tablespoons unsalted butter
  • 2 large eggs
  • 1 cup milk
  • Oil for deep frying

Syrup:

  • 2 cups sugar
  • 1 cup water
  • 1/2 teaspoon lemon juice
  • 1 cinnamon stick
  • A pinch of cream of tartar (to prevent crystallization)

Instructions

Prepare the dough:

  • Sift the flour, salt, and baking powder together in a large mixing bowl.
  • Rub the butter into the dry ingredients until the mixture resembles breadcrumbs.
  • In a separate bowl, beat the eggs and milk together.
  • Make a well in the center of the dry ingredients and pour the egg mixture into it.
  • Mix until you have a soft dough, adding a little more milk if necessary.
  • Knead the dough until it’s smooth, cover it with a damp cloth, and let it rest for about 30 minutes.

Make the syrup

  • Combine the sugar, water, lemon juice, and cinnamon stick in a saucepan.
  • Bring the mixture to a boil, then reduce the heat and simmer for about 15-20 minutes until it forms a slightly thick syrup.
  • Remove from heat, add a pinch of cream of tartar, and allow it to cool.

Shape the koeksisters

  • Roll out the dough on a floured surface to about 1/4-inch thickness.
  • Cut the dough into strips about 4 inches long and 1/2 inch wide.
  • Make a lengthwise slit in the center of each strip, leaving one end uncut.
  • Pull one end of the strip through the slit to create the twisted shape. You can make the twists as tight or loose as you prefer.

Deep fry

  • Heat the oil in a deep saucepan or fryer to around 350°F (175°C).
  • Fry the koeksisters in batches, ensuring they are golden brown and crispy. This should take about 3-4 minutes per batch.
  • Remove them from the oil and drain on paper towels.

Syrup soak

  • While the koeksisters are still warm, dip them into the cooled syrup, ensuring they’re well coated.
  • Allow them to soak for a few minutes, then remove and let any excess syrup drip off.

Serve:

  • Allow the koeksisters to cool completely before serving. They are best enjoyed when the syrup has soaked in and they are slightly sticky and sweet.
