Ingredients:

– 2 cups mango puree (fresh or canned)
– 1 cup plain yogurt
– 1 cup heavy cream
– 1/2 cup sugar
– 2 teaspoons gelatin powder
– 2 tablespoons water
– 1 teaspoon ground cardamom
– Sliced almonds and pistachios, for garnish
– Fresh mango slices, for serving (optional)

Instructions:

1. Prepare the Mango Lassi Mixture:
– In a mixing bowl, combine the mango puree, plain yogurt, heavy cream, sugar, and ground cardamom. Whisk until smooth and well combined.

2. Bloom the Gelatin:
– In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes to bloom.

3. Heat the Mango Lassi Mixture:
– Transfer the mango lassi mixture to a saucepan and heat it over medium heat until it begins to simmer, stirring occasionally to prevent scorching.

4. Incorporate the Gelatin:
– Once the mixture is hot, remove it from the heat and stir in the bloomed gelatin until completely dissolved.

5. Pour into moulds:
– Lightly grease individual ramekins or moulds with cooking spray or oil.
– Pour the mango lassi mixture into the prepared moulds, filling them to the top.

6. Chill and Set:
– Place the moulds in the refrigerator and let the panna cotta set for at least 4 hours, or preferably overnight, until firm.

7. Serve:
– To unmould the panna cotta, run a knife around the edge of each mould and gently invert it onto a serving plate.
– Garnish with sliced almonds, pistachios, and fresh mango slices, if desired.
– Serve chilled and enjoy the exotic flavours of Mango Lassi Panna Cotta as a refreshing finale to your Easter feast.
