Maamoul is a traditional Middle Eastern cookie filled with dates, nuts, or a mixture of both. Here’s a basic recipe to make maamoul at home:

Ingredients:

Dough:

  • 3 cups fine semolina
  • 1 cup all-purpose flour
  • 1 cup unsalted butter, melted
  • 1/2 cup powdered sugar
  • 1/4 cup rose water or orange blossom water
  • 1/4 cup warm water
  • 1 teaspoon instant yeast

Filling:

  • 1 1/2 cups dates, pitted and chopped
  • 1/2 cup mixed nuts (walnuts, pistachios, almonds), finely chopped
  • 1 tablespoon butter
  • 1/2 teaspoon ground cinnamon

Dusting:

  • Powdered sugar (optional)

Instructions:

Prepare the dough:


a. In a large mixing bowl, combine the semolina, all-purpose flour, powdered sugar, and instant yeast.
b. Add the melted butter and mix well until the mixture resembles crumbs.
c. Gradually add the rose water (or orange blossom water) and warm water, mixing until you have a smooth, pliable dough. If needed, add a little more water to achieve the right consistency. Cover the dough and let it rest for 30-60 minutes.

Prepare the maamoul filling:


a. In a saucepan, combine the chopped dates, butter, and ground cinnamon. Cook over low heat, stirring continuously until the dates soften and form a smooth paste.
b. Remove from heat and let the filling cool. Once cooled, stir in the chopped nuts.

Assemble the maamoul:

a. Preheat the oven to 350°F (175°C).
b. Divide the dough into small portions and shape each portion into a ball.
c. Take one ball of dough and flatten it in your palm. Place a small portion of the date-nut filling in the center.
d. Close the dough around the filling and shape it into an oval or round cookie. You can use a maamoul mold to make traditional patterns on the cookies, or simply use a fork to make a pattern on the surface.
e. Place the cookies on a baking sheet lined with parchment paper.

Bake the maamoul:


a. Bake the maamoul in the preheated oven for about 15-20 minutes, or until they’re lightly golden on the bottom.
b. Allow the maamoul to cool completely on a wire rack.

Dust with powdered sugar (Optional):


a. Once the maamoul cookies are completely cooled, you can dust them with powdered sugar for a decorative touch.

Serve and Enjoy:


a. Serve these delicious maamoul cookies with Arabic tea or coffee. They can be stored in an airtight container for several days.
